  Freezing-ahead basics for any big holiday meal work this way:

  DO FREEZE:

  Baked pumpkin, butternut squash and yam casseroles or merely the baked
  vegetable.

  Breads of all kinds

  Soups without cream or eggs

  Gravy, cranberry sauce and relishes

  Unbaked apple pies. Bake frozen, adding 20 minutes to the baking time.
  One caution: Use only metal pie plates. Glass or china ones will crack
  in the oven if they go in cold.

  Cookies and cakes without custard fillings

  Vegetables cooked and uncooked like mashed potatoes, corn, carrots etc.

  Milk

  DON'T FREEZE:

  Custards, which include pumpkin-pie filling

  Cream sauces

  Leafy and watery vegetables like greens and cabbage and raw tomatoes
  unless you are going to use in soup or sauce later.

  Jell-O salads, marshmallows or salad dressings
