ENCHILADA CASSEROLE

Ingrediants:

1-1/2 pounds ground beef

1 medium onion, chopped

1 15-1/2 ounce can refried beans

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup salad oil

12 corn tortillas

1 tomato, peeled and chopped

1 recipe cheese sauce (see below)

 

Directions:

Preheat oven to 350° F.

Cook ground beef and onion until browned, then drain.

Stir in refried beans, salt, and pepper.

Heat oil till it sizzles and quickly dip corn tortillas until soft.

Put 1/3 cup meat mixture onto each tortilla, top with some tomatoes and roll up 
tightly.

Put in an oblong baking dish.

Pour cheese sauce over top.

Bake in a 350° F oven for 20-25 minutes or until hot and bubbly.

Can garnish with sliced ripe olives.

 

CHEESE SAUCE

 

1-1/2 cups cheddar cheese (6-ounces)

1/4 cup butter

1/4 cup flour

1/2 teaspoon salt

1/4 teaspoon paprika

4 drops tabasco or favorite pepper sauce (more or less to taste)

2 cups milk

1 15-ounce can mild enchilada sauce

3/4 cup sliced ripe olives

 

Directions:

Melt butter insauce pan, blend in flour and seasonings.

Cook over low heat till smooth and bubbly.

Remove from heat.

Stir in milk and enchilada sauce.

Heat to boiling.

Add olives, tabasco

and cheese.

Stir until cheese melts.
