This is heavenly. It is so rich and creamy. I got this from one of my
groups and have no idea which one and who posted it. I feel so bad as I
would love to tell them how great it is. I think I would use the fat-free
half and half next time.
Helen's Chunky Bacon, Leek & Potato Chowder
Serves 6
8 slices Bacon
2 leeks, sliced using mostly white parts
4 ounces butter
1/2 cup flour
1 can Chicken broth
1 can Hot water
4 small potatoes; peeled and diced
2 cups Half and Half
Salt to taste
White Pepper to taste
Dash of Nutmeg to taste
Sauté bacon and leeks in a stockpot. Add butter, flour, and cook for 2
minutes. Stir in water, chicken broth, potatoes, and cream. Add salt,
white pepper, and nutmeg to taste. Bake at 325° until potatoes are tender,
about 1 1/4 hours. Se
