GLAZED CHICKEN MEATBALLS


Ingredients for Meatballs:

1 lb. ground chicken or turkey (a mixture of light & dark meat

is         really good)

1/3 cup dry bread crumbs

1 egg yolk

2 tsp. dried minced onion

3/4 tsp. curry powder

1/2 tsp. salt

1/4 tsp. pepper



Glaze:

1/2 cup red currant jelly

1/2 cup mango chutney

1 Tbsp. lemon juice



Directions:

For Meatballs:  Combine chicken, breadcrumbs, egg yolk, onion,

curry powder, salt & pepper.  Shape into 1-inch balls & place on

a parchment-lined baking sheet.
Bake at 350°F.

for about 20 minutes, turning half way through.





For Glaze:

Combine jelly, chutney & lemon juice in a large skillet.

Heat & stir over medium heat until warm.

Add meatballs;cook & stir uncovered for about 3 minutes or until

meatballs are glazed.

Serve any extra glaze on the side.
