Apple-Raisin Muffins
1-1/2 c. oats
1 c. flour
2/3 c. firmly packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 c. raisins
3/4 c. applesauce
1/3 c. apple juice or skim milk
2 egg whites or 1 egg lightly beaten
2 tbsp vegetable oil
1/4 c. oats
Heat oven to dg400. Line 12 medium muffin cups with paper baking cups
or spray the bottoms only with nonstick cooking spray.
Combine dry ingredients, including raisins and mix well. Add combined
applesauce, apple juice, egg whites and oil. Mix just until dry
ingredients are moistened. Fill the muffin cups almost full. Sprinkle
with remaining 1/4 cup of oats; patting gently.
Bake 20-22 minutes or until golden brown. Let muffins stand a few
minutes. Remove from pan and serve warm.
