How to Rescue a Recipe: Common Substitutes Air Date: 1/17/2007 It happens to all of us at one time or another -- we get involved in
cooking or baking, and suddenly we notice we*re out of an ingredient.
There*s no need to panic because we can usually substitute something
else we have on hand, and save the day -- and here are some common
substitutes: IngredientsSubstitutes1 cup self-rising flour1 cup all-purpose flour +
1½ teaspoons baking powder + ½ teaspoon salt1 teaspoon baking
powder1/4 teaspoon baking soda + ½ teaspoon cream of tartar1 cup light
brown sugar1 cup granulated sugar + 1 tablespoon molasses1 ounce
semisweet chocolate1 ounce unsweetened chocolate + 1 tablespoon sugar1
cup buttermilk1 cup milk + 1 tablespoon white vinegar or 1 tablespoon
lemon juice
The next time we need a kitchen rescue, help might be closer than we
think so we can continue baking and cooking up our favorite...
