PECOS CHICKEN SALAD


Ingrediants:

4                      Chicken breasts

1 t.                   Pepper

1 T.                  Paprika

1 t.                   Oregano

4                      Garlic cloves, minced

1 t.                   Coriander

6-8            Corn tortillas cut into quarters/baked crisp

1                      Romaine head, chopped

½                     Red onion, thinly sliced

2                      Tomatoes, quarters

1                      Avocado sliced

1 c.            Fresco, Mozzarella or blue cheese, shredded



Directions:

Toss chicken with seasonings; let marinate 30 min.

Saute in oil till done.
Brush tortillas with oil and sprinkle on herbs & Parmesan and bake or fry 
tortilla quarters till crisp.

Toss lettuce, onion, tomatoes with dressing of choice.

In circular pattern arrange chicken atop each plate alternately with avocado in 
between; sprinkle with cheese; garnish with chips.
