The Best Meat Loaf Ever

A meat loaf recipe used to be on the back of the Quaker Oats box. 
I've made a couple of changes, and my kids ask for it all the 
time. Double the recipe so you'll have plenty left over for 
sandwiches.

Ingredients:
1 1/2 lbs ground beef
3/4 cup oatmeal (quick or regular)
1 egg
1 cup crushed tomatoes (use salsa for Mexican loaf)
1 small onion, very finely chopped
2 large cloves garlic, crushed or chopped finely
1 tablespoon dried parsley
2 teaspoons Worcestershire sauce
salt and pepper to taste
Sliced bacon

Directions:
Preheat oven to 350. Mix everything together but the bacon. Place 
in pan, lay bacon strips on top.

I always double this recipe, and I bake it in a 9 x 13 glass pan. 
Bake for about an hour. If the bacon isn't cooked at an hour just 
turn the broiler on for a minute. If you don't like bacon, top 
with a very, very thin layer of ketchup. The sugar in it will 
caramelize while it's cooking and give you a nice top. I always 
make mashed potatoes with this.

I finally figured out I could mix this in my Kitchen Aid. It only 
takes a minute this way, and you have to be careful not to 
overmix it.
Prep time: 10 minutes

Serves about 6
