Cajun Shrimp Pasta
Ingrediants: 1 Tablespoon oil or vegetable oil spray 1 Cup chopped onion 1 Tablespoon chopped garlic 1 Pound vermicelli pasta or linguine, cooked and drained 1 Pound fresh large shrimp, peeled and deveined 1 Tablespoon butter, margarine or oil 1 Tablespoon Worcestershire sauce 1/2 Teaspoon dry crushed basil 1/2 Teaspoon thyme 1/2 Cup grated Parmesan cheese 1/2 Teaspoon cayenne pepper 1/2 black pepper 1/2 Teaspoon Tabasco sauce 1/2 Cup chopped green onions 2 Cup cups vegetable or chicken broth 2 Tablespoon sugar 2 Cup diced, peeled and seeded tomatoes Directions: Sauté the onion in the oil in a large pot. Add garlic and continue to sauté. Add seasonings, tomatoes and broth. Cook over medium-low heat for an hour. Sauté the shrimp in butter with the green onion until the shrimp is pink, but not totally opaque. Add the shrimp mixture to the sauce and continue to cook for 2-3 minutes. Serve shrimp sauce over hot pasta tossed with grated cheese. One of the qualities of a faithful friend is honesty even when the truth is painful.
