Impossibly Easy Vegetable Pie

2 c. chopped broccoli or sliced fresh caulifloweretts, or, (You may
substitute a 10-oz. bag of frozen chopped broccoli or cauliflower.
There's no need to boil frozen vegetables, just thaw, drain, and add
to pie.)
1/3 c. chopped onion
1/3 c. chopped green pepper, if desired
1 c. (4-oz) shredded Cheddar cheese
½ c. original Bisquick mix
1 c. milk
½ tsp salt
¼ tsp pepper
2 eggs

Preheat oven to dg400. Grease 9-inch pie plate.

Heat 1-inch salted water to boiling in medium saucepan. Add fresh
broccoli or caulifloweretts; cover and heat to boiling. Cook 5 minutes
or until almost tender. Drain thoroughly.

Stir together broccoli or cauliflower, onion, bell pepper and cheese
in a pie plate. Stir remaining ingredients until blended. Pour into
pie plate. Bake 35-45 minutes or until golden brown and knife inserted
into center comes out clean. Cool 5 minutes before serving.
