Cheesecake made with Cake mix
1 yellow cake mix
2 8-oz. pkgs. cream cheese, room temperature
1 can cherry pie filling
2 tbsp vegetable oil
1/2 c. sugar
4 eggs
1-1/2 c. milk
2 tbsp lemon juice
1/2 tsp almond extract
Reserve one cup of dry cake mix.
Blend remaining cake mix with 1 egg and oil. Blend well. Spread in
bottom and up sides of lightly greased 9- by 13-inch cake pan.
Filling: Place in bowl cream cheese, 3 eggs, reserved cake mix,
sugar, lemon juice, milk and almond extract. Beat until smooth. Pour
into unbaked shell.
Bake at dg300 45-55 minutes. When cool top with cherry pie filling.
