HOMEMADE HORSERADISH Here is an easy recipe to make your own horseradish in your processor or blender. Be careful not to breathe the fumes. They are strong, so be prepared. Do not touch your face or eyes after handling the horseradish root until after thoroughly washing your hands. Note: You can use a hand grater but be careful.
1 cup peeled and cubed horseradish root. Look for pieces of root 6-8 inches long, shrink-wrapped in plastic in the specialty produce department. 3/4 cup white vinegar 2 teaspoons white sugar 1/4 teaspoon salt In a food processor or blender, process horseradish root, vinegar, sugar and salt. Carefully remove the cover of the processor or blender, keeping your face away from the container. Cover and store the horseradish in the refrigerator. Plan to prepare only as much as you'll use in a few days or a week. Loosely wrap the remainder of the root in a plastic bag and store in the refrigerator. For horseradish sauce, you may add salt, Dijon mustard and either heavy or sour cream to taste. Or you can buy horseradish roots fresh, grated or processed and jarred with vinegar and usually salt as a condiment. Sometimes beet juice is added to the jarred horseradish, turning it a dark red. Store it in the front of your refrigerator. Once opened, it looses its pungency after a month or so. At our house, our favorite horseradish use is mixed with cranberry sauce on turkey sandwiches after Thanksgiving. Here are some other interesting uses for Horseradish: Mix with lemon juice, Tabasco and chili sauce or ketchup for a cocktail sauce to serve with shrimp or crabmeat cocktail or with fresh oysters and other seafood. Serve grated with meats such as roast beef, corned beef and sausage. Add to Dijon mustard for sandwich spreads. Add to sour cream for a chip dip. Use in salad dressings. Add to mashed potatoes. Or You Can Grow Your Own Horseradish: Horseradish is a perennial, but it should be dug up, trimmed and refrigerated after the frost comes until it's time to plant in early spring. It grows well in Zones 6 and 7. Plan to plant it in the corner of the herb garden in full sun where you can keep track of it. It grows about 24 inches high and 18 inches wide.
