Cowboy Caviar
2            tablespoons  red wine vinegar 
1 1/2      teaspoons  hot sauce -- (or more to taste) 
 1/2      teaspoons  salad oil 
1            clove  garlic -- minced 
1/8      teaspoon  pepper 
1            Medium  Avocado 
15 oz.    can black-eyed peas 
11 oz.    can  corn kernels 
2/3      cup  green onion -- thinly sliced 
2/3      cup  cilantro -- chopped 
1/2      pound  tomatoes -- chopped

In a large bowl, mix vinegar, hot sauce, oil, garlic, & pepper.
Peel, pit & cut avocado into 1/2 inch cubes.
Add to vinegar mixture & mix gently to coat.
Drain & rinse peas & corn.
Add peas, corn, onions, cilantro & tomatoes to avocado.
Mix gently to coat. Add salt to taste.
Serve with chips as an appetizer, or add cabbage & mix to make a salad.
