Easy Risotto
2 T. olive oil
1 C. sliced mushrooms
1 C. diced celery
1/3 C. diced onion
1 C. rice, uncooked
2 ½ C. chicken broth
¾ C. parmesan cheese, divided
¼ C. milk
Heat oil in skillet on medium heat. Add mushrooms,celery, and onion. Cook and
stir 5 minutes or until tender. Stir in rice & water. Bring to a boil, cover.
Reduce heat to low. Simmer 20 minutes or until rice is tender. Stir in ½ C. of
the cheese and milk. Serve with remaining cheese.
