GO TO BED MINT COOKIES
2 egg whites, room temperature
1/2 tsp. cream of tartar
3/4 c. sugar
4 to 5 drops food coloring
(green and red are best)
(pink and blue for baby
shower)
pinch of salt
6 oz. pkg. mint chocolate
chips (or semi-sweet
chocolate plus 1 to 2 drops
peppermint extract

Preheat oven to 375 degrees. Beat egg whites and cream of
tartar until foamy. Then gradually add sugar, salt and food
coloring. When stiff peaks are formed, stir in chocolate chips.
Drop by teaspoon on ungreased cookie sheet. Turn oven off and
"go to bed". Makes about 50 cookies. These store very well in
covered tins. My daughter's favorite.
