GRANDMA'S BURNT SUGAR CAKE
Instructions: Burn 1 cup sugar in heavy pan over low heat. Add 1/2 cup boiling water, continue cooking until like syrup. CAKE: 1 1/2 c. sugar 1/2 c. softened butter 2 egg yolks 1 tsp. vanilla 4 tbsp. burnt sugar syrup 2 1/2 c. cake flour 2 tsp. baking powder 1 c. water 2 egg whites, stiffly beaten Directions: Cream sugar and butter. Add egg yolks, vanilla and burnt sugar syrup. Cream well. Sift together flour and baking powder, add alternately to creamed mixture with water. Fold in egg whites. Pour into 2 greased and floured 9 inch round cake pans. Bake in 350 degree oven 20 to 25 minutes or until done. Ice with following: 1 1/2 c. sugar 3 tbsp. burnt sugar syrup 1/2 c. water 2 eggs whites, stiffly beaten Boil sugar, syrup and water until it spins a thread. Pour slowly over stiffly beaten egg whites, beating constantly until it stands in peaks. When we are grateful for the good we already have, we attract more good into our life.
