Ingrediants: 8 ounces cream cheese, softened 6 ounces melted white chocolate 3/4 cup vanilla wafer cookie crumbs 1 t. vanilla extract 1/2 c raspberry preserves 3-4 drops red food coloring (optional) 1/2 cup crushed almonds Directions: 1. Prepare a cookie sheet by covering w/aluminum foil and spraying w/nonstick cooking spray. 2. Place cream cheese in mixer bowl, beat medium-high til smooth and creamy. Add melted white chocolate, beat til smooth. 3. Stir in cookie crumbs, raspberry preserves, vanilla, food coloring. Cover w/plastic wrap, chill in refrigerator for an hour. 4. Shape mixture into small balls. Finish by rolling in chopped nuts.
