Tuna Ceviche

 

Ingredients:

1 1/2 lb. Yellow Fin Tuna (sushi-grade)

1/2 bunch of flat leaf parsley

8 oz. fresh squeezed orange juice

4 oz. fresh squeezed lime juice

2 poblano peppers

2 tomatillos

1 fresh mango (diced)

1 avocado (diced)

salt & pepper to taste

 

Directions:

In a blender puree until smooth the parsley, poblano peppers, tomatillo, orange 
juice, and lime juice.

Season mixture to taste with salt and pepper.

In a small bowl combine 3oz. of diced sushi-grade tuna with 2oz. of 
tomatillo-poblano mixture and ½ oz. of diced mango and avocado.

Serve immediately with corn tortilla chips.
