CHOCOLATE MERINGUE PIE

 

Ingrediants:

3 Tbsp margarine

1 pinch of salt

1/3 c flour

4 eggs, separated

1/3 c cocoa

2 c milk

1 c sugar

1 tsp vanilla

2 Tbsp butter

1 baked pie shell

 

Directions:

In a 4 cup glass measure, mix together sugar, cocoa

and flour.

Add milk mixing into sugar-flour mixture with a wire whisk.

Cook on HIGH for 2 minutes, stir with whisk. 

Continue cooking and stirring until thick, checking every 2 minutes, about 8 
minutes.

Separate eggs putting egg yolk in small bowl and whites in medium bowl for 
meringue.

 Add small amount of

hot filling to egg yolks stirring well.

pour into filling mixing well, return to microwave and cook 1 1/2 minutes to 2 
minutes on HIGH, stirring twice while cooking.

Add vanilla and butter, stir to mix and melt butter  Pour into a baked pie 
shell.

 Top with meringue made from 4 egg

whites. 

Brown in 350 degree F. oven for 15 minutes.

 

Meringue

4 egg whites

1/4 tsp cream of tarter

Dash of salt

6 Tbsp

 

Meringue:  Beat egg whites on highest speed of mixer

until stiff.  Slowly add 6 Tbsp of sugar 1 Tbsp at a time

mixing well after each addition. Continue to beat until

very stiff.  Pour onto top of pie.  Bake at 350 degrees

F. for approximately 10 minutes or until lightly brown.

Note: When putting meringue on pie be sure meringue

is placed against the pie shell edge to seal.
