mexican-corn-bread recipe Subject: Re: Corn bread (fatfree) Mexican corn bread loosly adapted from the Albers package 1 1/2 cup yellow corn meal 1/2 cup whole wheat flour 1 tablespoon baking powder 1 teaspoon salt (I leave out) 1 egg equivilent 1 cup nonfat milk 1 16 or 17 ounce can creamstyle corn 1/4 cup chopped onion 2 tablespoons chopped green chilies ( I use Ortega brand) minced jalapenos to taste couple tablespoons chopped red bell pepper (just for color, can omit) mix together dry ingredients mix together wet ingredients blend together, pour into 8 inch square baking pan, (sprayed lightly with cooking spray) bake 400 F for 35 to 40 minutes

Bake 15 to 20 minutes or until crust is golden brown and pears are tender *Do not use self-rising flour in this recipe Pecan Crust: Pecan Crust 1 1/3 cups all-purpose flour 1/3 cup packed brown sugar 1/3 cup finely chopped pecans 1/2 teaspoon ground nutmeg 1/2 teaspoon grated lemon peel 2/3 cup stick margarine or butter, softened Heat oven to 375 degrees. Mix all ingredients except mar- garine in medium bowl. Cut in margarine, using pas- try blender or crisscrossing 2 knives, until crumbly. Press firmly and evenly against bottom and side of ungreased 12-inch pizza pan.
