Pumpkin Pie 
  Prep: 20 min; Bake: 45 min; Chill: 4hr
  Makes 8 servings 
   
  Pastry for 9-inch One-Crust Pie (below) 
  2 large eggs 
  1/2 cup sugar 
  1 teaspoon ground cinnamon 
  1/2 teaspoon salt 
  1/2 teaspoon ground ginger 
  1/8 teaspoon ground cloves 
  1 can (16 ounces) pumpkin 
  1 can (12 ounces) evaporated milk 
  Sweetened Whipped Cream (below) 
   
  1. Heat oven to 425 degrees. Prepare pastry 
   
  2. Beat eggs slightly in medium bowl with wire 
  whisk or hand beater. Beat in remaining ingredients 
  except Sweetened Whipped Cream 
   
  3. To prevent spilling, place pastry-lined pie plate on 
  oven rack. Pour filling into pie plate. Bake 15 minutes 
   
  4. Reduce oven temperature to 350. Bake about 45 
  minutes longer or until until knife inserted in center comes
  out clean. Refrigerate about 4 hours or until chilled. 
  Serve with Sweetened Whipped Cream. Immediately 
  refrigerate any remaining pie after serving

  Lighter Pumpkin Pie
   
  For 2 grams of fat and 125 calories per serving, omit 
  Pastry for 9-inch One-Crust Pie. Heat oven to 350 
  degrees. Spray pie plate, 9x1 1/4 inches, with nonstick 
  cooking spray. Prepare filling as directed using evaporated 
  skim milk; pour into pie plate. Bake about 45 minutes or until 
  knife incerted in center comes out clean 
   
  Sweetened Whipped Cream 
  Prep: 5 min
   
  For 1 cup whipped cream 
   
  Beat 1/2 cup whipping (heavy) cream and 1 tablespoon 
  granulated or powdered sugar in chilled small bowl with 
  electric mixer on high speed until stiff 
   
  For 1 1/2 cups whipped cream 
   
  Beat 3/4 cup whipping (heavy) cream and 2 tablespoons 
  granulated or powdered sugar in chilled small bowl 
  with electric mixer on high speed until stiff 
   
  For 2 1/3 cup whipped cream 
   
  Beat 1 cup whipping (heavy) cream and 3 tablespoons 
  whipping (heavy) cream and 3 tablespoons granulated 
  or powdered sugar in chilled medium bowl with electric 
  mixer on high speed until stiff 
   
  1 Serving: Calories 55 (Calories from Fat 45); Fat 5g
  (Saturated 3g); Cholesterol 15mg; Sodium 5mg; 
  Carbohydrate 2g (Dietary Fiber 0g); Protein 0g 
   
  Flavored Sweetened Whipped Cream 
   
  Beat 1 cup whipping (heavy) cream, 3 tablespoons granu-
  lated or powdered sugar and one of the following 
  ingredients in chilled medium bowl with electric mixer 
  on high speed until stiff 
   
  1 teaspoon grated lemon or orange peel 
  1 teaspoon vanilla 
  1/2 teaspoon ground cinnamon 
  1/2 teaspoon ground ginger 
  1/2 teaspoon ground nutmeg 
  1/2 teaspoon almond extract 
  1/2 teaspoon peppermint extract 
  1/2 teaspoon rum flavoring 
  1/4 teaspoon maple flavoring
