Crockpot Taco Beef Stew 
- 
2-1/2 lbs stewing beef
1.25 oz pkg of taco seasoning
15 oz cn diced tomatoes; undrained
4 oz cn of green chilies (optional)
8 oz cn of tomato sauce
1/2 cup chopped onion 
1 beef bouillon cube 
30 oz canned red kidney beans; rinsed, 
drained 
Shredded cheddar cheese (optional)

Roll beef pieces in taco seasoning & 
place in crockpot. Combine remaining 
ingredients, except beans & cheese, 
pour over beef.  Cover;cook on Low 
for 6-7 hrs. 15 min before serving; stir 
in beans. Cover; heat through. Top 
individual servings with shredded 
cheddar cheese, if desired.
Prep note:  If using cheese....try changing 
to different cheeses (or even diferent 
strengths of the _same_ cheese) from
time to time for a *new* taste...or....put 
out 2-3 different cheeses and let everyone 
pick their own
Serving suggestion:  For *cleaning the 
plate*, some French bread, diagonally 
sliced, about1-1/2" thick, toasted in the 
broiler *till golden brown, and topped 
with garlic butter.  Then add a nice glass 
of chilled wine.....
