Ping Pong Pie Source: old newspaper clipping 1 (9") unbaked pie shell 1 c shredded Cheddar cheese 2 med tomatoes, peeled, cut in thin wedges 1/4 c butter 1/2 sm green pepper, diced 1 sm onion, thinly sliced 1 (8-oz) can water chestnuts, drained, sliced 3 eggs, slightly beaten 2 tbsp flour 1 c sour cream 1 tbsp soy sauce 1/2 tsp salt Dash of pepper Paprika In pie shell, sprinkle cheese & arrange tomato wedges. Melt butter in saucepan. Add green pepper, onion & water chestnuts. Sauté 2 min. Combine eggs, flour, sour cream, soy sauce, salt U pepper. Mix thoroughly. Stir sautéed vegetables into this mixture. Pour into pie shell. Sprinkle paprika on top. Bake at 350°F 50 min; test for doneness. Let stand out of oven a few min before serving. 4-6 servings
