> CREAMED POTATOES

> 4 pounds potatoes
> 6 tablespoons butter
> 6 tablespoons flour
> 1 teaspoon salt
> 1 teaspoon freshly ground black pepper
> 3 cups milk
> Peel and boil potatoes for 30 minutes.  In large saucepan melt butter
> then add flour, salt and pepper and stir until bubbly.  Remove from
> heat.  Gradually stir in milk then return to medium heat.  Bring to
> boil stirring constantly.  Boil and stir 1 minute.  Cut up potatoes
> into 1 inch pieces and put into casserole.  Pour sauce over potatoes
> and mix.  Cover casserole and bake 25 minutes at 350 until bubbly.
