Irish Potato Soup

Cut up & slice med size onion & sauté in 2 tbsp butter in 4 qt saucepan until 
soft. Wash, peel & cube 4-6 Irish potatoes, add to onions & cover them with

water. Bring to boil & simmer until done. Mash until most of potatoes are 
mashed up. Add 1/2 -1 c milk, depending on how much water has been absorbed.

Add salt & pepper to taste. Stir to mix well. Shredded Cheddar cheese may be 
added for a variation. Serve with homemade or store bought biscuits.

about 1/2 cup.
