Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Lb ground beef, lean 1 Med Onion -- chopped 12 Ozs - tomato sauce 1/2 C Water 1 Tsp Oregano 1 Qt cottage cheese 2 eggs 1 Tsp Salt 1/2 Tsp Pepper 2 lbs - mozzarella (or more, depending on your family's taste) -- shredded 10 Ea Lasagne Noodles -- approximately 1 Ice Cream Buckets or Other Suitable Freezer Container -- 1 gallon size Brown the hamburger in a skillet together with onion. Drain excess fat. Add tomato sauce, water and oregano. Simmer a few minutes to blend flavours. Remove from heat and set aside. Empty container of cottage cheese in a medium sized mixing bowl. Add the eggs, salt and pepper. Mix well and set aside. To assemble the lasagne, begin by covering the bottom of the ice cream bucket (or whatever container you are going to freeze in) with a scant layer of sauce. Place a single layer of uncooked lasagne noodles onto the sauce. You may have to break the noodles to fit them to the shape of the container. Don't worry, the noodles WILL be cooked when your lasagne is ready to serve. The extra water in the sauce is absorbed into the noodles, and produces a perfect, firm, easy-to-serve lasagne. Cover the noodles with a layer of sauce. Add another layer of noodles. Cover the layer of noodles with the cottage cheese mixture. Add another layer of noodles. Cover this layer of noodles with the remaining sauce. Top the whole thing with the shredded mozzarella cheese. Cover and freeze. Once frozen, you can remove it from the container and put into Freezer bags or similar for more compact storage in freezer. COOKING INSTRUCTIONS: You may cook this lasagne from frozen, or thaw before cooking, whichever you prefer. FROM FROZEN: Place in oven, bake at 350 degrees F for approx. 2 hours or until heated through. (Cooking times vary depending on size and shape that you made your lasagne) FROM THAWED STATE: Place in oven, bake at 350 degrees F for 1 hours or until heated through. (Cooking times vary depending on size and shape that you made your lasagne) CROCKPOT: This is my preferred method of making this meal. Simply place the lasagne in the crockpot, turn it on low, and let it cook all day. What could be better than coming home to a wonderful hot meal at the end of a long day? MAKING MULTIPLES FOR FREEZER: This method was originally created for bulk freezer cooking. Simply multiply your ingredients, and then set up an assembly line on your counter!
