POLISH  EASTER  CHEESE  CAKE
 
2 3/4 c. Flour
10 1/2 tbsp. Butter
6 tbsp. Powdered sugar
2 egg yolks2 1/2 c. Bland cottage cheese
1/2 c. Butter
1 c. Sugar
4 egg yolks
5 egg whites, beaten
12 tbsp. Orange peel 
Lemon Peel 
Vanilla1/2 c. Water
1 1/2 c. Sugar
2/3 tsp. Cream of tartar
Lemon juice to taste 
 
Cut butter into flour, combine with sugar and knead with egg yolks. 
Roll out dough into two round sheets.  Place one in cake pan.  Bake
at 350 degrees until lightly brown.   Strain cheese.  Cream
butter.  Add one egg yolk at a time to butter.  Then add sugar and
cream thoroughly.  Add cheese to mixture, blend and mix for 10
minutes.  Add finely chopped orange and lemon peel and vanilla at
end.  Add beaten eggs to cheese mixture.  Place on baked dough,
spread evenly.  Cover with second round of raw dough, prick and place
in oven.  Bake for 1 hour at 350 degrees.   Mix well.  Then
after cake has cooled, ice or sprinkle while hot with vanilla sugar.
