Onion-Stuffed Muffins
Source: old newspaper clipping 4 tbsp butter, divided 1 1/2 c finely chopped onion 1 1/2 c buttermilk 1 egg 2 1/2 c all-purpose flour 1 1/2 tsp baking soda ¾ tsp salt In med saucepan, melt 1 tbsp butter. Add onions & cook 5 min or until softened. Remove & reserve. Melt remaining butter. In am bowl, stir together buttermilk, egg & melted butter. In lg bowl, stir together flour, baking soda & salt. Make well in dry ingredients. Add buttermilk mixture & stir until just combined.. Grease 12 (2 1/2") muffin cups. Spoon about 1 1/2 tbsp batter into each cup. Spread 1 1/2 tsp cooked onions over batter & top with remaining batter. Sprinkle with remaining cooked onion. Bake in 400°F oven 25-30 min or until golden brown.
