Diabetic Salsa Chicken

We gave grilled or broiled chicken breasts a kick by brushing them with spiced 
oil, the topping them with ready-made salsa. So quick, so simple, so delicious!

2 tbsp olive oil

1 tsp cumin

1/2 tsp lime zest

1/4 tsp pepper

1/8 tsp red pepper flakes

4 boneless, skinless chicken breast halves, about 1 lb

1 c prepared mild salsa, drained

Lime wedges & fresh cilantro sprigs, optional

Coat grill or broiler rack with nonstick cooking spray. Prepare grill for 
direct heat or position oven rack 4" from broiler & heat. IN bowl, combine oil,

cumin, lime zest, pepper & red pepper flakes; brush over both sides of chicken 
breasts. Place breasts on grill or rack set in broiler pan. Grill or broil,

turning once, until cooked through & no longer pink in center, 6 min per side 
for grilling or 8-10 min per side for broiling. Serve with salsa &, if desired,

garnish with lime wedges & cilantro sprigs.
