Basic Deviled Eggs
  Source: old newspaper clipping

  6 hard-cooked eggs, shelled
  3 tbsp mayonnaise
  1/2 tsp Dijon mustard
  2 tsp white wine vinegar or fresh lemon juice
  Salt & cayenne pepper to taste
  Pimento stuffed olives

  Halve eggs lengthwise or crosswise. Remove yolks, reserving egg whites. 
Force yolks through fine sieve into mixing bowl. For basic eggs: Add 
mayonnaise, mustard, vinegar or lemon juice, salt & cayenne pepper. Blend 
thoroughly. Taste & adjust seasoning. Using pastry bag fitted with fluted 
tip, pipe mixture into egg whites, mounding it or use spoon to fill egg 
whites. Arrange eggs in single layer on lg deep dish. Cover & chill. Remove 
eggs from refrigerator 1/2 hr before serving & arrange them of platter. 
Garnish centers of eggs with parsley sprigs, olive slices or red caviar.
  12 servings

  Feta Cheese-Stuffed Eggs
  12 hard-cooked eggs, shelled, halved
  1/2 c crumbled feta cheese
  2 tbsp olive oil
  3 tbsp finely minced fresh parsley
  3 tbsp minced chives
  Salt & freshly ground white pepper to taste
  Plain yogurt
  Black olives or dill feathers

  With fork, mash feta cheese with olive oil. Stir in sieved egg yolks & 
next 4 ingredients. Stir in enough yogurt to moisten. Fill egg whites with 
yolk mixture as above, mounding to use all filling. Top with black olive or 
dill feather.

  Mexican Style Stuffed Eggs

  6 hard-cooled eggs, shelled, halved
  1/4 c mayonnaise
  1/2 tsp salt
  1/3 c tomatoes, drained, chopped
  1 tsp chili powder
  Tomato pieces & hot pepper, for garnish

  Combine sieved egg yolks with next 4 ingredients. Blend thoroughly. Fill 
egg whites with spoon, piling egg yolk mixture into centers. Proceed as 
above. Garnish with tomato pieces & hot pepper.

  Pimento-Filled Eggs

  6 hard-cooked eggs, shelled, halved
  1 tbsp butter
  2 tbsp finely chopped pimento
  Salt & white pepper to taste
  1 tbsp mayonnaise
  12 tiny watercress leaves

  Combine sieved yolks & next 4 ingredients. Add enough of tbsp mayonnaise 
to moisten. Fill egg whites with yolk mixture as above. Refrigerate as 
before. Top each egg 1/2 with a tiny watercress leaf.

  Pizza-Flavored Stuffed Eggs

  6 hard-cooked eggs, shelled, halved
  2 tbsp mayonnaise
  1 tsp oregano
  1/8 tsp garlic powder
  2 tbsp ketchup
  Pepperoni, for garnish

  Combine sieved egg yolks with next 4 ingredients. Blend thoroughly. Fill 
egg whites with yolk mixture as above. Refrigerate as before. Garnish with 
pepperoni.

  Salmon-Stuffed Eggs

  6 hard-cooked eggs, shelled, halved
  1/4 lb smoked salmon, finely chopped
  1/3 c sour cream
  2 tbsp fresh squeezed, strained lemon juice
  Salt, fresh ground pepper to taste
  Sprig of dill or slices of salmon, for garnish

  In container of electric blender, blend yolks with next 5 ingredients. 
Taste & adjust seasoning. Fill egg whites with yolk mixture as above. 
Proceed as before. Garnish center of each stuffed egg 1/2  with sprig of 
dill or slices of salmon.

  Smoked Turkey-Stuffed Eggs

  8 hard-cooked eggs, shelled, halved
  4 oz ground smoked turkey
  1/8 tsp dried sage
  Bottled creamy French dressing
  Minced fresh parsley
  Almonds, for garnish

  Mash yolks with fork to crumble. Stir in turkey & sage. Blend in enough 
dressing to moisten. Spoon egg mixture into egg whites. Arrange on platter. 
Garnish with almonds.

  Spinach-Stuffed Eggs

  6 hard-cooked eggs, shelled, halved
  3 oz cream cheese, room temp
  3 tbsp cooked spinach
  3 tbsp freshly grated Parmesan cheese
  Salt to taste
  Freshly ground pepper to taste
  Freshly grated nutmeg to taste
  2 tbsp heavy cream

  Combine sieved yolks with next 6 ingredients. Bland thoroughly; add heavy 
cream, as needed to give mixture a creamy consistency. Taste & adjust 
seasoning. Fill egg whites with yolk mixture as above. Refrigerate as 
before.

  Stuffed Eggs with Asparagus

  6 hard-cooked eggs, shelled, halved
  1/4 c sour cream or unflavored yogurt
  1 tbsp finely chopped chives
  1 tbsp finely chopped parsley
  1 tbsp freshly squeezed lemon juice
  1/2 tsp curry powder
  1/2 tsp salt
  Cayenne pepper to taste
  Ground pepper to taste
  24 cooked asparagus tips
  12 strips pimento

  Combine sieved egg yolks with next 8 ingredients. Blend thoroughly. Taste 
& adjust seasoning. Fill egg whites with mixture as above. Top each stuffed 
egg 1/2 with 2 cooked asparagus tips & 1 strip of pimento.

  Yogurt Deviled Eggs

  6 hard-cooked eggs, shelled, halved
  1/4 c plain yogurt
  1 tsp instant onion
  1 tsp parsley flakes
  1 tsp lemon juice or dry vermouth
  3/4 tsp prepared mustard
  1/4 tsp salt
  1/4 tsp Worcestershire sauce
  1/8 tsp pepper
  Oregano & chives, for garnish

  Mash yolks with fork. Blend in remaining ingredients, except garnish. Fill 
whites using about 1 tbsp yolk mixture for each egg 1/2. Garnish with 
oregano &/or chives.
