COMPANY'S COMING CHICKEN SALAD
Serves 6-8
4 chicken breast halves with skin and ones (about
2 3/4 lbs.)
1 small yellow onion, sliced
1 tsp. salt, plus more to taste
1/4 tsp. freshly ground black pepper, plus more
to taste
2 medium celery ribs, minced
1 small red onion, finely chopped
1/2 medium green bell pepper, seeded and cut
into 1/4 inch dice (1/2 cup)
1 garlic clove, minced
3 hard-cooked eggs peeled and chopped
1/3 cup sweet pickle relish
1 cup mayonnaise (I Anise, use miracle whip)
Crushed red pepper flakes to taste
Green or Boston lettuce leaves
Paprika
Place the chicken and sliced onion in a large saucepan and add enough cold
water to cover. Add 1 tsp. salt and 1/4 tsp. pepper. Cover and bring to a
boil over medium high heat. Reduce heat to medium low. Simmer just until
the chicken shows no sign of pink when pierced in the thickest part, about 20
minutes.
Remove from the heat and let cool in the liquid. Remove and discard the skin
and bones and cut the meat into 3/4 inch pieces. Cool completely. In a
large bowl combine the chicken, celery, red onion, green pepper, garlic, eggs
and relish. Gently stir in the mayonnaise, seasoning with the red pepper
flakes and additional salt and pepper to taste. Cover and refrigerate until
chilled about 1 hour.
Place the lettuce leaves on individual salad plates. Spoon the chicken salad
on the lettuce leaves and sprinkle with paprika and serve.
I usually put mine on bread and make a sandwich, it's just as tasty!
