Sinful Orange Crusted Pumpkin Pie with Bourbon Whipped Cream

 

Ingredients

1-1/4  cups all-purpose flour

1/2  teaspoon granulated sugar

1/2  teaspoon salt

1/4  cup vegetable shortening

1/4  cup butter, cut up (no substitutes)

1  teaspoon grated orange peel

2  tablespoons orange juice

1/2  cup granulated sugar

1/4  cup firmly packed brown sugar

1  teaspoon cinnamon

1  teaspoon ground ginger

1/2  teaspoon cloves

1/2  teaspoon salt

1  can (15 oz.) solid-pack pumpkin

1  can (12 oz.) evaporated milk

2  large eggs

1-1/2  teaspoons grated orange peel

1   egg yolk, beaten

1  teaspoon water

1  cup heavy or whipping cream

2  tablespoons granulated sugar

2  tablespoons bourbon

 

Directions

1. To make crust, in a medium bowl, mix together flour, sugar, and

salt.

Cut in shortening and butter until the mixture resembles coarse crumbs.

Stir in orange peel and just enough orange juice to work dough into a

ball with your hands. Refrigerate 1 hour. Roll dough between two sheets

of waxed paper into a 12-inch round. Fit into a 9-inch deep-dish pie

plate. Trim and flute edge. With a fork, poke several holes in the

bottom and side of crust. Refrigerate until chilled and firm, 20

minutes. Meanwhile, heat oven to 375 degree F.

 

2. To make filling, in a large bowl, mix together the sugars, cinnamon,

ginger, cloves, and salt until well combined. In a separate large bowl,

whisk together pumpkin, evaporated milk, eggs, and orange peel. Slowly

add the dry ingredients to the wet ingredients, whisking constantly.

Set

aside.

 

3. In a small cup, whisk together egg yolk and water. Brush crust with

egg wash, then pour filling into crust. Bake until the center of the

filling is set, 35 to 45 minutes. After 40 minutes, tent crust with

foil

if it gets too dark. Cool on a wire rack.

 

4. To make bourbon whipped cream, beat cream, sugar, and bourbon in a

large mixer bowl at medium-high speed until soft peaks form. Serve a

dollop of cream with each pie slice. Makes 8 to 10 servings.
