Sweet Tamale Pie

Makes: 6 servings
Ingredients  
1 pound  lean ground beef1 medium onion, chopped1 medium green
bell pepper, chopped2 cloves garlic, crushed1 cup  whole
kernel corn1 can (4 ounces)  diced green
chilies, divided1 can (14-1/2 ounces)  Hunt*s® Diced
Tomatoes in Juice, drained, divide tomatoes1/2 teaspoon 
salt1/2 teaspoon  ground black
pepper1 package (8-1/4 ounces)  cornbread mix1/4 cup  Egg
Beaters® Egg Product, or 1 large egg1/3 cup  milk1 cup 
shredded Cheddar cheesePAM® Original No-Stick Cooking Spray
Directions 
Preheat oven to 400°F. 
Cook ground beef, onion, bell pepper and garlic in a large skillet over
medium-high heat for 5 to 7 minutes or until meat is no longer pink;
drain. Stir in corn, half of the green chilies, tomatoes (save 1/4 cup
for cornbread topping), salt and pepper. Cook over medium heat for about
5 minutes. 
Combine cornbread mix with egg and milk in a medium bowl; mix well. Add
remaining green chilies, reserved tomatoes and cheese; stir to combine. 
Pour meat mixture into a 9-inch glass pie plate sprayed with cooking
spray. Spread cornbread mixture over the top. Bake for 20-30 minutes
oruntil wooden pick inserted in the cornbread comes out clean.
