BIBB LETTUCE WITH MONTICELLO DRESSING

  3 firm heads Bibb lettuce
  1/4 c. cider vinegar
  1/2 tsp. salt
  6 drops Tabasco sauce
  1 tsp. Dijon mustard
  Juice of 1 lemon
  Pepper
  1 tsp. finely diced red bell pepper
  3/4 c. sunflower oil
  1/2 tsp. chop fresh chives
  3 slices bacon, crumbled
  1 hard boiled egg, chopped

Separate leaves from lettuce heads and soaking very cold
water until crisp; drain. Wash lettuce thoroughly and dry
on paper towel. In metal bowl, stir together vinegar, salt,
Tabasco, mustard, lemon juice, ground pepper and red pepper
using a wire whisk. Gradually add oil beating constantly
until dressing is thickened. Add chives and stir. Transfer
dry lettuce leaves to large mixing bowl. Add 1/4 cup of
dressing and toss lightly. Divide salad among 4 plates.
Sprinkle with bacon and chopped egg and serve at once.
