ROAST BEEF SALAD W/HORSERADISH RED CABBAGE

 4 TB.                  Horseradish
 3 TB.                  Balsamic vinegar
 3 ts.                   Dijon mustard 
 2/3 c.               Olive oil
 4 c.                  Red cabbage, shredded
 6 oz.                 Roast beef, cut into strips
 2/3 c.               Anise
 1/2                  Red onion, thinly sliced
 ½ c.                 Roquefort cheese, crumbled

 Whisk horseradish, vinegar, mustard, slowly add oil till
 blended.  Cook cabbage till just wilted; transfer to bowl &
 cool; mix in beef, anise, onion, cheese & dressing and pepper.
