Cabbage with apples & cranberries
1 medium red cabbage, shredded
1 large apple, cored, peeled & diced
1 cup fresh or frozen cranberries
1/3 cup red wine
2 tablespoons red wine vinegar
1 small bay leaf
1 whole clove
1/4 cup white or brown sugar
1 teaspoon salt
1/4 cup butter
1 medium onion, chopped
1 cup water
In a large bowl, mix cabbage, apples, cranberries, red wine, bay leaf,
clove, sugar & salt.
(If time permits; mixture can be marinated at room temperature
for 8 hours or overnight.)
In a large pot; heat butter.
Add onions and cook until soft but not brown.
Add cabbage mixture & water.
Cook until soft.
Serve as a side with pork dinners.
