Bleu Cheese Potatoes
2 whole Idaho potatoes about 1 pound 
1/4 cup sour cream 
1/4 cup crumbled bleu cheese 
1 teaspoon chopped fresh parsley
Preheat oven to 400 degrees. Pierce potatoes with fork. 
Bake until tender, 45-50 minutes. Remove from oven; let 
stand until cool enough to handle. Cut potatoes in half 
lengthwise. With spoon, scoop out potatoes pulp, forming 
4 shells. Place pulp in bowl; add sour cream, cheese and 
parsley. With potato masher, blend until smooth. 
Spoon potato mixture into shells. Place on baking sheet 
and bake until heated through, about 15 minutes
