Decadent Peanut Butter Chocolate Chunk Cookies

1 1/2 cups peanut butter

1/2 cup margarine -- at room temperature

2 1/2 cups firmly packed light brown sugar

3 large eggs

1 tablespoon vanilla extract

1 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 1/2 cups peanuts, oil-roasted -- blanched, chopped

1 pound semisweet chocolate -- cut in 1/2" chunks

 

Preheat oven to 325?F. Grease heavy large cookie sheets.

 

Using electric mixer, beat peanut butter and margarine in large bowl until

creamy. Gradually beat

in brown sugar. Add eggs 1 at a time, beating well after each addition.

Beat in vanilla.

 

Mix flour, baking powder, and salt in small bowl. Add to peanut butter

mixture and stir until

just combined. Mix in peanuts and chocolate. Cover and refrigerate dough

until well chilled,

about 3 hours.

 

Shape dough into 1" diameter balls and place on prepared cookie sheets

spacing 2" apart. Bake

until tops of cookies are light brown and dry to touch, about 12 minutes.

Cool on cookie sheets

for 5 minutes. Transfer to rack and cool completely. Store in airtight

container.
