Basic Shepherds Pie
 
    5      large         Sweet potatoes -- quartered
      1/4  cup           milk
    2      tablespoons   butter
                         pinch nutmeg
                         salt & pepper to taste
    2      tablespoons   vegetable oil
    2      medium        onions -- diced
    1      stalk         celery -- finely chopped
    1      medium        carrot -- diced
    1      teaspoon      dried thyme
      1/4  teaspoon      chili flakes
    1      pound         lean ground beef
    2      cups          cooked  roast beef -- diced
    3      tablespoons   flour
      1/3  cup           beef broth
    2      tablespoons   tomato paste
    2      tablespoons   Worcestershire sauce
 
     Preheat oven to 375 degrees.
    1. Bring large pot of water to a boil,
cook potatoes until tender, about 20 minutes; drain.
    2. Add milk, butter, nutmeg, salt & pepper to potatoes &
mash until smooth & fluffy.
    3. Saute onions, carrot, & celery in oil over medium heat
for 5 minutes.
Sprinkle with thyme & chili flakes.
    4. Add ground beef, & cook until no longer pink.
    5. Stir in roast beef, sprinkle with flour, then pour in
beef broth, tomato paste,worcestershire ssauce, salt & pepper;stir well.
Reduce heat & cook for
  5 minutes.
6. Spread meat mixture in a square casserole,
spread mashed potatoes over top
bake 35-45 minutes until heated through.
    7. Place under broiler for 1 minute.
