Chicken Shepards Pie
1/2 recipe Creamy Chicken Enchilada filling
2 cups frozen peas, thawed
1 cup cooked carrots, diced
6 cups mashed potatoes, cooked and cooled
paprika (optional)
Directions:
Mix peas & carrots together with enchilada filling. Spoon into an 8x8 
casserole dish. Top with mashed potatoes. Sprinkle with parika, if desired. 
Wrap in foil and freeze.
To reheat, remove from freezer and defrost. Preheat oven to 350*F and bake 
for 30 to 35 minutes, until bubbly hot and heated through.
