Tomato-Cheese Pie
2 crust Pastry for 9-inch pie
1 medium tomato
4 oz. Cheddar cheese
6 bacon slices, crisp-fried
3 eggs, beaten
1-1/4 cups milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup snipped parsley

Preheat oven to 350°.
Cut tomato into 8 wedges; arrange in a circle,
equidistantly, on bottom of pie shell.
Grate cheese; crumble bacon, sprinkle over tomato.
Blend eggs, milk, salt, pepper & parsley.
Pour over cheese.
Bake 50 minutes, or until firm. Let pie stand for 10 minutes.
Serve in wedges.
