Ahi Tuna (Nine)

 

Nine

Ingredients:

6 oz. Ahi Tuna, Sashimi grade

2 ea baby bok choy

olive oil

salt

black pepper

mint-lemon ermolata (recipe follows)

hummus (recipe follows)

baby greens

 

Ermolata:

2 sprigs chopped mint

lemon zest chopped 1/4 lemon

1/4 cup extra virgin olive oil

salt

black pepper

sliced almonds

 

Hummus:

1 cup garbanzo beans

1/2 shallot, chopped

1 clove garlic

1/2 cup extra virgin olive oil

water to thin

salt

black pepper

2 Tablespoons lemon juice

1 sprig thyme-picked

 

Directions:

1. For Ermolata Mix everything in bowl, adjust seasoning

2. Put all ingredients into food processor, puree until smooth. Adjust 
seasoning, use water to thin out puree to a thick sauce consistency.
