TEXAS RICE

2 lbs. hamburger
1 green pepper
1 lg. onion
1 lb. Colby cheese
1 lb. bacon
3 c. instant rice (before cooked)
1 lg. can whole tomatoes
1 lg. can tomato sauce

Fry bacon and crumble into bowl. Leave small amount of
grease in pan, dry onion and green pepper. Add
hamburger. Drain grease and put all ingredients in
bowl with bacon. Boil 3 cups water with 1 teaspoon
salt. When water boils, add the rice, remove from heat
and cover for 5 minutes. Cut tomatoes in small pieces.
Add tomatoes with juice to the other ingredients.
Grate cheese. Add cheese, rice and tomato sauce.
Reserve 1/2 cup cheese to sprinkle on the top. Mix all
ingredients well. Put into a casserole dish and 
Bake at 350 degrees for 30 minutes
