Shrimp Scampi

 

1 LB. Shrimp (cleaned)

1/4 cup olive oil

4 tbsps. Butter

1/2 cup white wine (or chicken broth, I use Campbell's) small can

Chopped Parsley

2 Cloves garlic, minced

1/2 onion, chopped

1 tbsp. Fresh oregano

Directions:

Heat olive oil and saute' onion and garlic for 2 - 3 minutes in large skillet 
over medium heat.

Pour wine or chicken stock into pan and reduce (5 minutes)

Add shrimp and heat for 2 - 3 minutes or untl hot through the center. (being 
careful not to overcook).  Stir in butter, oregano and parsley.  Salt and pepper

for added flavor.  Serve with  pasta or rice. (I used baked potatoes and poured 
the leftover sauce on the potatoes.

Note:  I also spinkled about 1/4 teaspoon of McCormick Old Bay Seasoning on 
mine while cooking for added flavor instead of salt.

 



When we are grateful for the good we already have,
