VIRGINIA APPLE PUFFS 

2 eggs
1/2 c. milk
1/2 c. flour
Dash nutmeg
2 fresh apples, peeled & chopped
Raisins
Walnuts


Slightly beat eggs; add milk, flour and the dash of nutmeg; whisk 
together (the batter will still be a little lumpy). Preheat oven 
to 400 degrees. Put a pat of butter in each of 2 au gratin dishes 
and put in oven until it melts. Pour batter into hot dishes. Top 
with the apples, with sugar and cinnamon to taste and 
walnuts/raisins, if desired.Pop into oven for 15 to 20 minutes 
until puffy and browned.

Serve topped with powdered sugar and with Virginia maple syrup on 
the side. Makes enough for 2.
