DATE FILLED COOKIES
  

1/2 c. shortening
1/2 c. brown sugar
1/2 c. white sugar
2 eggs
2 c. enriched flour
1/4 tsp. salt
1/2 tsp. soda

Thoroughly cream shortening and sugar. Add eggs and beat well. Add sifted dry 
ingredients; mix thoroughly. Chill. Roll 1/2 inch thick on lightly floured
surface. Cut with floured cookie cutter. Place teaspoon of filling on half of 
cookies. Top with remaining cookies. Press edges together with fork. Bake
on greased cookie sheet in hot oven 400 degrees for 10 minutes.

DATE NUT FILLING:

1 c. chopped dates
1/4 c. sugar
1/3 c. water
1/2 c. chopped walnuts

Combine dates, sugar and water; cook over low heat until thickened, about 5 
minutes. Add walnuts. Cool before putting between cookies.  Enjoy.
