Banana Bread

 

3 ripe bananas, mashed (helpful kitchen hint-- use a fork rather

than a spoon)

3/4 cup sugar

3/4 cup vegetable oil

2 eggs

2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 teaspoons vanilla extract

1/2 cup crushed walnuts (optional)

 

Combine the bananas, sugar, oil and eggs in a bowl.

When mixed, add the remaining ingredients and mix well.

Pour batter into greased and floured 9"x4" (or similar)

loaf pan. Bake in preheated oven at 325 degrees for 60 to

70 minutes. Test for doneness with a toothpick.

Cool on rack for 10 minutes, then remove from loaf pan and cool
