Pecan Pie Bars
(from the Ultimate Southern Living Cookbook) 1 3/4 cups all-purpose flour 1/3 cup firmly packed brown sugar 3/4 cup butter or margarine 1 cup firmly packed brown sugar 4 large eggs 1 cup dark corn syrup 1/4 cup butter or margarine, melted 1 tsp. vanilla extract 1/8 tsp. salt 1 1/4 cups chopped pecans Preheat oven to 350 degrees. In Batter Bowl, combine flour and 1/3 cup brown sugar; cut in 3/4 cup butter with Pastry Blender until crumbly. Press mixture evenly into a greased 9 x 13-inch pan (note: if using a baking stone, you don't need to grease it). Bake for 15 to 17 minutes. Combine 1 cup brown sugar and next 5 ingredients in Batter Bowl; stirring well. Stir in pecans. Pour filling over prepared crust. Bake for 35 minutes or until set. Cool in pan on Stackable Cooling Rack. Cut into bars. Yield: 2 1/2 dozen Sandy U.
