LEMON BREAD

2 2/4 cups flour
1/2 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening
1 cup sugar
1/2 cup wheat germ
3-4 tablespoons grated lemon rind
2 eggs, lightly beaten
1/2 cup lemon juice
1/2 cup water

Preheat oven to 350F.

Sift the flour, baking soda, baking powder and salt into bowl. Using a pastry 
blender, cut the shortening into the flour as though making a pie crust.

Stir in sugar, wheat germ, lemon rind and eggs.

Combine lemon juice with water and stir in. Mix enough to moisten the dry 
ingredients. Pour batter into a greased loaf pan and bake for 1 hour or until
cake tester or wooden toothpick inserted in center comes out clean.  Enjoy.
