CRANBERRY BREAD

2 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 cup sugar
1 orange (juice and rind)
2 tablespoons shortening
boiling water (see below)
1 egg
1/2 cup chopped nuts
1 cup coarsely chopped cranberries

Preheat oven to 325°F.

In a large bowl, sift together dry ingredients: 2 cups flour, 1/2 teaspoon 
salt, 1 1/2 teaspoons baking powder, 1 teaspoon baking soda, 1 cup sugar. Set
aside.

To juice and rind of one orange, and 2 tablespoons shortening, add boiling 
water to make 3/4 cup. Allow to steep (as you would tea) for 10 minutes.

Add the orange mixture to dry ingredients and stir. Beat one egg and stir in.

Add 1/2 cup chopped nuts and 1 cup coarsely chopped cranberries.

Transfer to a greased loaf pan and bake for one hour. Cover and keep overnight 
before slicing.  Enjoy.
